Our Berkshire pork ham, or "pigue," is the portion of the ham without the leg, trimmed and available either deboned or bone-in, and blast frozen. It comes in slabs or diced into small cubes. Cut from the back leg area, pigue is excellent for stews, braises, roasting, or boiling. It’s ideal for meaty Adobo or cut into chunks for Menudo, depending on your recipe needs.
